How can I dispute a speeding ticket? How many points do you get for speeding and can a cop clock your speed while driving next to you?

It is very difficult to challenge a speeding ticket. A police officer determines speeding by one of two methods (1) radar or (2) pace. With regard to "radar", the officer has an instrument, a radar gun, that is focused on the other car and determines the speed. They use a similar instrument in professional baseball to determine pitch speed. It is tested regularly with tuning forks to determine accuracy and is very difficult to challenge. With regard to "pace", the police officer is basically looking at the speed of his own vehicle and seeing whether the other car is keeping pace or gaining on him. The speedometer is also tested regularly to determine whether it is accurate or not. Again, because of the regular testing, it is difficult to challenge.
