Does a quit claim deed override a mortgage contract? Will that relieve me of my legal rights and interests of a home if I give the other co-borrower a quit claim deed so they can claim sole ownership in the property that once was shared between both of us?

No, you would still be on the mortgage or debt. Not a good idea. Should refinance and give a quit claim.
