can i legally tell a process server (for my husband) to leave my property and not return?

There is no law against you telling him that. Your request, however, is unenforceable (assuming your husband lives there), and will likely be ignored.

Evading service is ultimately a pointless endeavour. You are only increasing your costs if you lose (since you will need to reimburse the other side for the costs of serving you). It's probably best to stopp prolonging the inevitable and arrange to accept service in an unobtrusive manner.
