Legal Question in Credit and Debt Law in California

California Small Claims Question. For my demand letter, can I send it with proof of delivery, so if the defendants lies and say they never got the letter, at least I can check the USPS website and have proof that it was delivered?

Absolutely. There is no problem with sending the letter by certified mail or by another method allowing for proof of delivery.
