if i received a 5 day unlawful detainer, in california, in the mail, when does the 5 days start? from the date they sent it? or the day i received it? and how do they know when i actually received it thru the snail mail?

Service by mail alone is improper. It is not clear whether you were served via substituted service, or have not been properly served at all. I suggest you go to the courthouse where the complaint is filed with your ID and get a copy of the proof of service and see how the plaintiff is claiming you were served.
