How do I find out who a businesses insurance carrier is, so that a demand letter can be sent

You can't, and it would be pointless anyway. You can't make any kind of meaningfull demand on another person's or entity's insurance. The insurance carrier has an obligation to the insured, to defend and/or indemnify them from your claim, not an obligation to you. You have to make the demand on the other person or business. THEY get to decide whether or not to ask their insurance company to investigate and defend and/or settle the claim. You can recommend in a demand letter that they submit it to their insurance company, but that's it.

Mr. McCormick is right. The carrier owes duties to the insured, not to third parties with claims against the insured. Send your demand letter to directly to the business.
