I made a check to a person that told me he was going to pay a company and he keeped the money?

Your question is a bit unclear. If you gave a person a check to pay a debt you owed a company and he just cashed the check and kept the money from the check, then you can sue that person for conversion, breach of contract, etc. Why did yo give him the money and not your creditor? Report the fraud to the police, and sue the person..
