If the police issued me a ticket for evading and eluding, with stating they have a witness who can identify me, how likely is it they can try to prove it was me when I was not apprehended

Hard to say how "likely" something can be without knowing a lot more information. What matters is how the cops determined it was you. The witness maybe knows you personally. Maybe the license plate info was taken down and you are associated with the car and a photo lineup was used with your image inserted. This will simply be an ID case. It can be proven, but it will be very fact specific

It is impossible to say how likely anything is, especially without knowing more information. Who is this witness? How well did they get to look at you? How credible do they appear? Did they have an opportunity to see you? These are all things we can't know for sure. Your attorney will have a chance to question of all the witnesses and get a better idea of the answers to these questions.
