Signature applications

If a legal document such as a Will, Living Trust, et. al. is a multiple page document, does each page have to be notarized or at least initialed and dated by the creator to ensure validity?

No -- althugh an initial is sometimes a good idea and is some proof that the signer read each page, a seperate signature or initial is not required.
