If you are going to have a lot of people over and they are going to be riding go-carts can you type up a waiver for them to sign releasing you from being held responsible in case of an accident?

You can type up anything, but you can still be sued. I'd suggest you get a $2 to $4 million dollar umbrella insurance policy (call your car insurer) before you have anyone come over. Otherwise, cancel the event.
