Contract cancellation

If a buyer verbally tells her agent that she wants to cancel the real estate contract, but the agent does not have her sign a cancellation and instead, writes the cancellation letter and signs it herself, is the contract cancelled?

The next day, while still in her accetrance period, the buyer changes her mind and decides to go ahead with the escrow.

Now seller refuses to sell to her and buyer will not cancel escrow---she wants the place.

Is the contract legally cancelled? or can the buyer force the seller into continuing escrow.

One crucial question: Did the buyer authorize (consent) their agent to cancel the deal?
