if a person takes their name off of a deed willingly, can the court force the other owner to sell and split the proceeds with the person who removed their name from deed but now says they were coerced by the co-owner?

Insufficient information, but generally if you give up title you have no right to a "partition" action that is the kind of lawsuit that could force a sale. If there is any paperwork showing what the arrangement was, however, that might have another result, so if there is, take it to an attorney for review.
