How can we protect ourselves from my aging mother's time share contracts.

Insufficient information. What "protection" do you need? Most arrangements only charge you if you actually occupy the unit, but I've seen a few that attempt to impose some 'minimum' annual charge regardless. So have an attorney review the contracts.
