What does waiving homestead rights for an easement mean. Does it mean that the original owner gives up all rights to the easement

Usually a spouse who is not on title will "waive homestead" which is like saying I have no claim on the property, because the law implies there may be. This protects the party receiving the easement deed you won't have a claim on the property in the future. But it can apply to various things, so why not have an attorney look at it and make sure.
