If you send it back, they will likely send you a fresh replacement product or your purchase price and the matter will be over. If you ate some of the product before you discovered the mouse dropping and you believe you suffered damages as a result (for instance, if you got sick and had to go to the hospital, needed medication, etc.), then you might consider having the mouse droppings analyzed by a professional, take pictures, etc, and not send it back. You could also consider making a report to the FDA (federal Food and Drug Administration) so that they can investigate and pull the product off shelves so others don't get hurt (if necessary).

Ultimately, I understand that it's gross, but if you suffered no damages, your only recourse against the company is likely a refund of your purchase price. Don't plan on getting rich.

Best of luck.*****The above is for informational purposes only and does not create an attorney-client privilege.******
