As the spouse of a patient currently in a nursing home suffering with dementia, am I responsible for patient's credit card debt if I am not a consigner or cardholder of said credit card

Yes, spouses can be responsible for a patient's "necessaries", including medical care, if the medical care provider knows of this law and has a policy of trying to enforce it.
