power of attorney was signed, and filed before we noticed that my grandmothers last name was misspelled by one letter, does that make it invalid?

This called a scrivener error. They usually do not invalidate a document. But, when you can, its usually best to correct the error. Your grandmother can do this, if she still has capacity.
