Joint Property vs.Will

If husband/wife hold real property/bank accounts jointly with right of survivorship, does this take precedence over distribution mentioned in a will? Do these items need to go through probate or if remaining assets worth less than $10,000, can probate be avoided? Can any challange be made to joint property held as mentioned?
