Legal Question in Technology Law in New Jersey

Just wanted to understand the legal implications of releasing my app across the globe (i.e. not restricting the app to a particular country).

My app will collect personal data such a date of birth, gender, country, relationship status etc. of users across the globe. People can view other users individual information as 'user profile' (something like most social networking sites do). I am planning to store the user data on servers based in US, while my company is registered outside US/UK/EU.

I am concerned about data privacy and security laws that i need to be aware of here. Would EU or UK or any other country/region laws have issues with data being stored outside their country. How are other social networking websites able to handle this?

You are going to be held to the standards imposed based upon where you are operating from not necessarily where all of your customers come from. But if you are deemed to have a presence in any of these places that can change. There are a great many legal considerations that underpin this kind of venture and this is only one small issue you are raising.
