does the oldest son or daughter have to be the Executor of the will in new jersey

No. As long as the person is mentally competent and is not a minor, he/she may be appointed to serve as executor.

Ms. Jacobson is correct, anyone can be chosen as executor as long as the person is not a minor, and is mentally competent.

I agree - anyone can be an Executor if competent and not a minor. Family members need not be appointed, nor does age of a family member give them priority to be appointed. Many people use their attorney or accountant
