Power of Attorney

If I signed over power of attorney to another is any legal agreement I made without that individual's consent binding under the law?

Providing a POA to another does not disqualify you from acting in your own behalf if you are otherwise competent to do so. The answer to your question is "yes." You may wish to consider revoking the POA if it no longer fits your needs.
