Legal Question in Technology Law in North Carolina

I currently have a restraining order against me and the person who filed that order against me for harassment has me going back to court saying that I am sending her Facebook messages which I did not do. Is there a way to contact Facebook to get records of all the messages I've sent from my account including deleted messages (so they can't argue that I just deleted the messages)? How long should this take and how should I go about getting the records if possible?

This will likely be difficult and likely unnecessary. If the holder of the restraining order wants to show you sent messages, that person has to prove you sent them. They will need to present messages from you to him or her. If they can't producde these, then no loaw has been violated. If no such messages were sent, then they can't present them to the Court.
