When I began my job, I signed a ''non-compete'' agreement. In this, it states that I am to give a sixty day written notice unless both parties come to another agreement in writing. What could happen if I don't give a full 60 days notice? I'm willing to give a notice, but most employers are not going to wait 60 days for me start a new job. I know that my current employer will not come to a mutual agreement. Please help.

They could sue you for breaching the contract (since the clause sounds reasonable and you did sign it), but it's going to be hard for them to quantify their damages. They might claim that you owe them for the cost of hiring a temp worker or whatever business they lost because you quit without giving them 60 days' notice.
