If a judgement is awarded against me, can the creditor sieze death benefits (life insurance) in the event of my demise?

The answer depends on who is the beneficiary of the policy. If your estate is the beneficiary (rare), then the creditors may have an argument to go after the funds. If the beneficiary is someone else, then the creditors would not have access to the funds, absent some unusual circumstance (for example, if the life estate beneficiary was also a co-guarantor of the note in question.)
