what does motion to adjudicate dismissed mean? My 17 year old son was arrested again after he received deferred adjudication.

Means that they did not find him guilty - "adjudicate his guilt" - but instead dismissed the motion and likely amended the terms of his deferred probation. It also means those some allegations of violation can be used in the future to revoke him if they so choose.
