Legal Question in Credit and Debt Law in Utah

I sent papers that I made changes to, along with a payment. They told me they could not accept my payment of 9/24 and would look at the changes I made to the documents. I sent another payment on 10/23 and they cashed that check. Now I have received a revised document charging me more money and dated 11/9. If they accepted a payment from me, are'nt they obligated to honor the document that is associated with the payment?

Not unless there was an agreement in place which they accepted, or language on the check which made the check subject to a certain agreement
