If you were set for a bench trial, how can the prosecutor change it at trial and say if you dont take this plea Im continueing this to a jury trial?

Yes, the rules allow for this as I've already noted in a previous answer. (Whether the judge, however, would grant the prosecution a continuance based soley upon that reason is another matter.)
