If you write something on a simple piece of paper and sign it, it does not have good worth under the law. If you write the same on a stamp paper then it has an evidential value. If you use witnesses along with righting then those witnesses can be summoned by the court later and they can corroborate the value of whats written on the paper.

Your opponent can use the simple piece of paper written by you with your signatures in the court of law in absense of any other substantial evidence, but it is a weak evidence and its then the descretion of court either to exhibit it or not after wards.
