Legal Question in Entertainment Law in Arizona

do you need a release (signed) by all volunteers that are going to be in a music video that will be broadcast on youtube (video shot by me) and maybe for sale on itunes, even if they are over 18 years old? the release would say ..... "I agree I am a volunteer on this video shoot, and I am in no contract to receive money for this film, and this film will be broadcast on the internet, and may be for sale on itunes at some point."
