how do I go abouts changing the names of 2 of my minor children?

Depends. Are there custody orders? We either could do so through the Family Court, or could file a "Petition for Name Change of Minor" in Probate Court. The Dad will have to be notified. If he objects, the Court has to determine that the name change is in the children's best interests despite dad's objection.
