What happens, if I sign an acknowledgement of satisfaction of judgement, when I receive a check from the judgment debtor and later their check bounces?

You can report the check-writer to the district attorney and there could be penalties. Better yet, have them provide you with a cashier's or certified check. You might contact the court, and file an application to rescind the satisfaction of judgment. If it is rescinded, you would want to record the order of rescission with the county recorder. Then you can proceed with collection activities.
