Legal Question in Criminal Law in California

So, my house had been burglared twice and i installed security cam to catch burglar. Burglar was caught and she was my roommate's friend and she took $300 worth of possessions when she came over to our house when i was not at home. Total worth of possession taken during three times of burglary was about $1600 but wasnt sure first two times are hers.

Anyways, next day in the morning, i took her to police station to turn her in and accused her for burglary but she denied her guilty and asked for evidence. So i showed her the footage of her crime and she begged me what she can do to not turn her in. So, I told her to make agreement. She first suggested me several hundred dollar and i refused and ask her to pay $2000. I asked this amount because money i lost to catch burglar was equivalent of that amount. She told me its too much but at the end, she agreed to pay me. I got my $300 worth of possesion back and because she didnt have enough money at that time to pay 2000, so we agree to pay 2000 in two month. First due date was next month but even after 35 days, she didnt pay me and kept on lying to me. So i got so frustrated because she was not cooperative at all. And then i had to tell her if you dont pay me, i will let your friend see what you did by posting the video footage, or i will just turn her into police.

So, today, she told me she would pay first thousand, but instead, she brought her friend with camera to tell me that I am guilty of extortion asking for money and threatening. So I told her that I dont need money and wont post those videos, but will turn her in. And she said i would get felony with extortion and she would get misdemenor, threatening me to not turn her in.

I am very frustrated with her breaking promise, continuous lies and uncooperative attitudes. I need help with this situation. What could be best action at this point. I don't want her to get away with this. Also, how big is the chance that i would get prosecuted for extortion?

Since you know who the thief is, and have some good evidence, why don't you just sue her and get a judgment?
