If I go after my ex for child support, does he have the right to see my check stubs that have my social security number and how much I pay for utilities and who is living in my home?

He has the right to be served with and receive a full an accurate Income and Expense Declaration, with two months' worth of paystubs attached. The form does not ask for your Social Security Number, and if it appears on your paystubs, you should black it out. The form asks about your monthly expenses, including your utilities and it also asks who else resides within your household.
