Termination after giving two weeks notice

If an employee gives notice she is quitting, can I fire her?

If so, must I pay her out for her notice period?

It depends on what company policy is. Some employers ask for the courtesy of a two week notice. If the employee relied on such a policy she would have a contractual claim for the two weeks. If there is no policy or other agreement, either party can terminate employment at any time.
