In a professional conversation can someone put you on speakerphone with others present without your knowledge or permission?

Yes they can and you might not even know it. But it is a common professional courtesy to tell everyone who is on the phone even before they ask. So you can ask and at least that way they would have to lie and that would make it a little better if the conversation came up later.
