Can a Collections Company sue me in (2) different Counties in Florida for same matter??

No. The proper jurisdiction is the State you lived in when the debt was incurred or where the contract designed. The venue (the county) is again where you currently live or again the county or district the contract designated. All that being said, only one action can be sustained for the same contract.
