Legal Question in Family Law in Florida

My Dad has been with his girlfriend for 7 yes. She is bipolar, has been declared incompetent, and is addicted to pain pills. She is also still married to another man. My Dad has become disabled physically. He is still in sound mind. He is currently involved in a lawsuit for having his leg amputated. Since this has come about, she has informed me that she thinks she will get a divorce and marry my dad. My question is, because of her mental status, what rights will she have involving my dad if they do married? Is there something I can do with or without my fathers permission to protect him and his assets in the event that something was to happen to him and they were married?

If she marries your father without a pre-nup then from that day forward everythings they own is marital property, and if not careful maybe other assets too.
