lost wages

I am taking the owner of a resturaunt to small claims court due to the fact that he has closed his doors, and has not paid me 3 paychecks. The only information that I have for him is the resturaunt which he previously was running and the phone number to the resturaunt. He rented the building, so now it is back up for lease, and the phone is shut off. will the state be able to find his records how can they supoena him to court or give him the notice that i am taking him to court if i dont have any information on him??

You have a misunderstanding about how small claims work. The state does not do anything. You must know where to find the person or business that you are suing. The sherrif will go and serve the papers (for which you will pay a fee), but you must tell them where to go. If the person is not there and can't be served, you still owe the service fee. If you cannot find the person you want to sue, you are out of luck. Since the restaurant appears to be out of business the chances that you will get anything from them is probably very small and may not be worth your time or effort.
