Legal Question in Real Estate Law in Florida

My landlord is really turning the screws to me...any advice?

My apt. complex never cashed my rent checks and never put any 3 day notice on my door. The law in my observation is HEAVILY weighted towards the landlord in this matter.. Since I did not notarize my checks upon mailing, I have no evidence other than witnesses (one, my girlfriend and hopefully another, a police officer next door that I have contacted) that they did not notify me and I was unaware of the problem. I signed their order vacating judgement of eviction that releived me of any late and legal fees. Now they are billing me for them and I want out!! Will my witnesses even be relevant to the issue? After signing this document have I basically admitted guilt? (even though I'm getting railroaded)
