Protecting Assets via Florida Land Trust

I have recently been made aware of many benefits of buying and owning property in any state using a Land Trust. My sources claim that Florida has very liberal tax and probate laws as they pertain to Land Trusts. Where can I verify this is true, and if it is true, how can I set up a Land Trust?
