Delaying Probate

How long can one hold off on probating an estate, there was no will either

There is no way to answer you as you posted no details. You should see an attorney promptly as delay is generally a problem that worsens with time, although there could be exceptions.

If there was no will, the procedute is to administer the estate, also in the probate court. While there is no time limit, this should be done ASAP. Consult with an attorney.
