Do changes to a simple will need to be witnessed or notarized? We are in GA.

Making changes in even a simple will is not, well, a simple matter. Given the consequences of doing it wrong, you should attempt this yourself. Consult with a local attorney.

One should NEVER "change" a will. While one can make what is known as a codicil, a codicil means there are two conflicting documents to reconcile, and if you make the additional mistake of doing it yourself, you could create a disaster.

If you want to change a will, see a lawyer to draft a new will. If the will is "simple" this may cost less than a few hundred dollars. Feel free to call me if I can assist you.
