Legal Question in Civil Litigation in Illinois

Defendant's counsel has denied every item of fact in a filed complaint. Does every item have to be answered with evidence (discovery) or, only those items that will prove my case, such as the defendant's own incriminating documents?

Can the defendant's counsel keep asking for documents? Surely there comes a point where enough is enough and defendant's counsel has to stop running up MY bill due to all the responses required - Breach of contract case - Thank you.
