Will I be able to get a job?
I have recently been charged with retail theft, If I get a conviction for the first time will I still one day be able to get a job as a probabtion officer with something on my backround?

No one can predict the future, or what the job requirement will be for a probation officer. Your goal should be to avoid a conviction and get the matter expunged from your records. A lawyer can discuss your options with you.
