can someone sue me more money for a truck that is not worth the value they are trying to sue me for

That would depend on the circumstances. If this is due to a collission and the other party also lost use of the vehicle, he can sue for the value and for loss of use up to the date of trial, subject to a duty to mitigate his damages.
