Selling Recipe Books
If I copy recipes off an internet site, and place them into handmade recipes books and then sell them on the internet like Ebay as gifts or in craft consignment shops is that illegal?

That is illegal because you do not have permission to use those recipes for commercial purposes. YOu would need to get a license from the holder of copyrights on those recipes.
