Surveying Land of another person

Is it legal for someone to hire a surveyor to survey your property without your knowledge and have it recorded against your deed in the County Clerk's Office.

I am not exactly sure of what you are asking. The description in the deed controls. Did someone file a plat of your property in the courthouse? Why? Generally, no one can survey your property without your permission except in cases where neighbors are establishing their boundary. Then as a matter of practicality they will survey your line as well in order to establish where the boundary should be. Sometimes, this is where errors turn up. Contact the folks who surveyed the property to find out.
