Is it possible for an US-based company
to buy property in Kenya (to build a
resort)? If yes, what would be the legal
process in transferring ownership? If
no, are there alternative arrangements
aloud?

This isn't a real estate question, this is an international law question: you need to find out about the laws of Kenya pertaining to foreign ownership of land and property (assuming there is no US prohibition of Americans owning land in Kenya).
