having an employee arrested on possible theft

I am an owner of a small video rental store. We have had a manager for nearly 2 mths now, and I strongly suspect she has been stealing money. Other people have access to the money during business hours, but she is the only one that handles the money for bank deposits. We have noticed that at least $1000.00 can't be accounted for, and has never made it to our bank for deposit. I let her know about a couple of the deposits, and she has an excuse for them both, one of which, she ''accidently'' deposited to HER account. The other she says she has no idea where it is and to take it out of her check. I need to know, what I should do to take action against her. She has, as of today, left town to visit her daughter, and I will be very surprised if we see her again! I am ready to go as far as needed to make sure she doesn't have another opportunity to steal again. Please help!?!

From what you have posted, it doesn't appear that you have sufficient evidence to warrant the police arresting her or the DA prosecuting her. Since she is an employee at will, you may want to discharge her. Another possibility is to change the way you do business, so she never handles any money.
