My son is renting a college dormitory style apartment with three other students. One of the students stopped paying rent and moved out. Do we have to cover the students unpaid rent for the remaining portion of the lease?

It depends on the lease. If the lease named all three individuals, then each individual is separately responsible for the lease. Therefore, the remaining students would have to cover the unpaid rent.
However, that does not mean that the remaining students cannot sue the student that left for indemnification.
